Nkate Nkawan Delights by Luca

Enjoy all the flavours of African cuisine with this delicious sauce recipe from Central Africa. The traditional recipe is based on locally sourced products such as peanuts, rice, lentils, peas, chicken, beef and pork. At Luca we have created this delicious 100% vegetable alternative to Nkate Nkawan, replacing the chicken with vegetable protein.

This is a quick and easy recipe with an extraordinary flavour. Luca Delights have exactly the same flavour and texture as chicken, which means you won’t miss it. Enjoy your meal, or… lekkal bu bakh!

Ingredients

80g Luca Delights

30 g red pepper

30 g white onion

10 g fresh coriander

100 g crushed tomatoes

30 g peanut butter

100 g fresh pasta (no‑egg pappardelle)

Extra virgin olive oil

Pepper

Salt

Rawmesan:

50 g raw cashews

20 g nutritional yeast

How to prepare

Prepare the ingredients

Finely brunoise the onion and red pepper. Fry the onion and pepper in a saucepan with the olive oil, then add the tomato and chopped coriander and bring the sauce to a simmer. Add salt, pepper and finally the peanut butter. Leave to reduce.

Fry the Luca Delights until golden brown

Fry the Luca Delights in a saucepan with olive oil until golden brown. When they are golden brown, add a little of the previously prepared sauce and reduce. Repeat this step a couple more times.

How good is rawmesan!
To get an amazing vegan parmesan all you need are these two ingredients: dried cashews and nutritional yeast. Crush both products with a hand blender and watch the magic happen!

Cook the pasta and plate up

Boil the fresh pasta according to the instructions. Put the pappadelle at the bottom of the dish, and serve the sauce and Luca Delights on top. Give it a special touch with rawmesan and fresh coriander. It couldn’t be tastier!
